We use the shoulder for our Gloucester Old Spot sausages, this gives the sausage the correct level of lean meat to fat ratio. The end result being a succulant, tender sausage full of the true flavour of the Gloucester Old Spot, NOT a pan full of fat or a sausage that just tastes like bread!
